The gluten free pastry is bought in, and there are strict procedures in place to limit the risk of gluten contamination. Gluten free savoury items are made in separate mixes, and the pastry is rolled out after all benches and equipment have been totally cleaned. Clean trays are used, and, after cooking and cooling, the baked goods are individually sealed in clear cellophane packaging. Sweet items follow a similar procedure, using special tins and individual packaging.
The multi-grain bread is cooked in separate tins, and only prepared when everything is thoroughly cleaned down. Once cooled, loaves are individually packaged, and are available fresh or frozen.
All of the baked lines are available in the cafe, and gluten free sandwiches can be made to order. Separate tongs are used, and gluten free goods are housed in a separate area of the cabinet.
