Having followed a strict gluten free diet herself, Carole Hofflin conducts gluten free cookery classes and advises the hospitality industry regarding food intolerances. She has written several gluten free cookbooks and a gluten free food reference book. All of the recipes are simple, easy to follow and prepared from ingredients that are readily available from health food stores and the health food section of most supermarkets.

Carole has produced four gluten free books:
1. Gorgeous Gluten-Free: Recipes for cakes, biscuits, pastry, dough and bread – a collection of basic recipes (now out of print).
2. More Gorgeous Gluten-Free: Baking for Special Occasions or Sheer Indulgence - a collection of mouth-watering dessert cakes and biscuits (now out of print).
3. Is it gluten-free? An A-Z of things gluten-free (2nd Edition) - Newly updated and revised, this is an indispensable reference for anyone on a gluten-free diet, for hospitality and for medical professionals.
4. It is gluten-free: Delicious recipes for everyone to enjoy - containing over 90 recipes covering main courses, accompaniments, desserts, bread, baking for special occasions and European specialties. Also includes the original recipes from Carole's first two books.
Gluten Free Cookery Classes
Conducted each Semester at the Gordon TAFE, Geelong, Victoria, this short course provides a basic understanding of gluten free cookery. It includes gluten free cooking, label reading, and other helpful information and discussion about the gluten free diet.
Gluten Free Consultancy to the Hospitality Industry
Carole consults with professionals in the hospitality industry to enhance understanding and provide information updates regarding food allergies and intolerances, thereby providing improved customer service. She also outlines strategies to achieve workable, cost and time efficient ways to cope with food allergies and intolerances.
